Breakfast Burritos

This is a fairly simple recipe for some delicious filling breakfast burritos. This recipe can me modified to add any of you favorite fillings not mentioned in the list of ingredients. Enjoy!

Ingredients:

4-5 large eggs

6-10 strips of thick center cut bacon

4 red potatoes (diced)

4-8 flour tortillas - large

shredded Chease

1 white onion

2 roma tomatoes (diced)

1 avocado (sliced)

garlic powder (as-needed)

taco seasoning

1. Pan fry bacon. When fully cooked, let rest on a paper towel to soak some of the leftover bacon grease. Set aside coverd. (crumble the bacon when adding it to the burrito)

2. In a medium bowl mix diced potatoes, and enough mixture of salt, pepper and garlic powder to coat the potatoes. Ive found that the more garlic powder i add the crispier the potatoes get.

3. In a large frying pan add approx. 2 cups of vegetable oil (canola oil will work also). Enough oil to just about cover the potatoes when you put them in. Heat oil on medium high and after a few minutes throw a few test potatoes in to see if they start to fry. When they do, add the rest of the potatoes. Let fry on medium to medium high for about 3-5  minutes. Add approx. 2 - 3 tablespoons of taco seasoning into the frying potatoes. Let cook additional 3-5 minutes or until golden brown and crispy. Remove from pan and place into bowl lined with layers of paper towels to absorb any excess oil.

4. Scramble eggs and place in a bowl.

5. Warm a tortilla in the microwave. In the warmed tortilla add a mixture of eggs, crumbled bacon pieces, crispy potatoes, onions, cheese, tomatoes, 1 sliced avocado, and roll tightly in tortilla. Place in microwave for 30 seconds to melt cheese. Serves up real nice with La Victoria Salsa Brava or any regular household salsa.

Makes approx 4-8 burritos depending on the size of the tortilla and amount of mixture put into burrito.

Add cilantro, black beans or, jalapenos to kick it up a bit.
