Use chicken leg 1/4’s Clean with cold water Pat dry Coat with thin layer of Oil Salt Lightly onion powder and garlic powder Fire Up Charcoal I like Weber Kettle Grill Have two Beers ? Coals 1/2 gray Y-Put Chicken On Skin Side Up N-Have another 2 beers Allow chicken to cook then flip. I also like to rotate the weber grill grate. Helps with even cooking Continue to cook. No sauce Yet OK Just Relax ! Flip a couple more time. Sauce time. No Not the red BBQ crap ! I use a nice seasoned vinegar based sauce like Cheveta’s or My own’ County Fairs Roc Sauce’ www.roccitygrillin.com Continue to cook to 160 degrees Slap on some more sauce. REMOVE FROM GRILL OK Critical time and TIP OF THE DAY!!!!! LET CHICKEN SIT FOR AT LEAST 15 MINUTES I LIKE TO PUT CHICKEN IN AN OLD COOLER. LETS IT CONTINUE TO COOK AND KEEPS IT WARM YOU CAN ALSO WRAP IT IN FOIL EAT AND ENJOY! ANY COMMENTS?

This is a simple turkey recipe. It is called Spicy Minty Turkey. It cooks very fast and is good to eat!!!!!

Here is the recipe:

Ingredients (for 5-8 lbs turkey or bone-in turkey breast)

Marinade : Salt 1 teaspoon
pepper 1 teaspoon
Canola oil 1 tablespoon
grated onion 1 big
grated ginger 1 teaspoon
cloves of garlic 4 cloves
mint leaves a dozen leaves
Cilantro leaves 1 table spoon
(squashed)
Vinegar 1 tablespoon
Cumin seeds 1 teaspoon
(powdered)

Filling : cube stuffing 2 cups
onion 1 diced
carrots 1 diced
beans 6-7 chopped
pineapple diced 1 cup
Salt 1 teaspoon
pepper 1/2 teaspoon

Procedure: Clean the frozen turkey and make slits (1 inch long) in the meat. Insert cloves of garlic and the mint leaves in the slits. Rub with the rest of the marinade. Leave in the refrigerator for thawing for 2 days.
Mix all the filling ingredients with a table spoon of butter and some milk. Stuff the turkey and sew all the openings in the neck and near thighs.
Bask with butter before putting in a roasting pan. Roast in the oven first at 425 F for 30 mins then at 350F for 1.5 hrs till knife inserted in thickest part of meat makes the juices run clear.

Note: The marination reduces the cooking time. This recipe can also be modified for chicken but the amounts have to be reduced according to weight of the chicken.

This is a fairly simple recipe for some delicious filling breakfast burritos. This recipe can me modified to add any of you favorite fillings not mentioned in the list of ingredients. Enjoy!

Ingredients:

4-5 large eggs

6-10 strips of thick center cut bacon

4 red potatoes (diced)

4-8 flour tortillas - large

shredded Chease

1 white onion

2 roma tomatoes (diced)

1 avocado (sliced)

garlic powder (as-needed)

taco seasoning

1. Pan fry bacon. When fully cooked, let rest on a paper towel to soak some of the leftover bacon grease. Set aside coverd. (crumble the bacon when adding it to the burrito)

2. In a medium bowl mix diced potatoes, and enough mixture of salt, pepper and garlic powder to coat the potatoes. Ive found that the more garlic powder i add the crispier the potatoes get.

3. In a large frying pan add approx. 2 cups of vegetable oil (canola oil will work also). Enough oil to just about cover the potatoes when you put them in. Heat oil on medium high and after a few minutes throw a few test potatoes in to see if they start to fry. When they do, add the rest of the potatoes. Let fry on medium to medium high for about 3-5 minutes. Add approx. 2 - 3 tablespoons of taco seasoning into the frying potatoes. Let cook additional 3-5 minutes or until golden brown and crispy. Remove from pan and place into bowl lined with layers of paper towels to absorb any excess oil.

4. Scramble eggs and place in a bowl.

5. Warm a tortilla in the microwave. In the warmed tortilla add a mixture of eggs, crumbled bacon pieces, crispy potatoes, onions, cheese, tomatoes, 1 sliced avocado, and roll tightly in tortilla. Place in microwave for 30 seconds to melt cheese. Serves up real nice with La Victoria Salsa Brava or any regular household salsa.

Makes approx 4-8 burritos depending on the size of the tortilla and amount of mixture put into burrito.

Add cilantro, black beans or, jalapenos to kick it up a bit.

Enjoy!!!
